As to our usual plans our next dinner will be the first Monday in January. This time we have decided to do our own Chinese New Year meal. Keep that in mind as you think about what you will be bringing to share.

December: Christmas Dinner
Salad w/Apples & Blue Cheese
Pea Crab Salad (Loa Anderson)
Recipe:
2 cups Crabmeat
2 cups Celery
5 Tbs. Mayonaise
2 Tbs. Celery Seed
Dash of Dry Parsley
Dash of Paprika
1 Bag Frozen Peas
1 Bag of Noodles (Shell or other small noodles)
Directions:
Mix ingredients together until salad is well blended and all items are coated evenly. Serve cold.

Garlic Greenbeans
Smoked Turkey
Cranberry Apple Crumble (Rae Lake)
Recipe:

3 cups peeled, chopped baking apples
2 cups whole raw cranberries (my preference is frozen)
1-1/2 tsp. lemon juice, fresh squeezed
1-1/2 cups white sugar
(adding 1/8 tsp. salt)
1-1/3 cups quick-cook oatmeal
1 cup chopped walnuts
1/3 cup brown sugar (packed tight)
1 stick melted butter
Directions:
Pour mixture of apples and cranberries into a greased 2 qt. casserole. Sprinkle with lemon juice and cover with white sugar. In a medium mixing bowl, blend just enough to moisten: quick

oatmeal (Quaker 1 minute type), chopped walnuts, brown sugar and
melted butter. Pour crumb mixture evenly over fruit.Bake uncovered at 325* for 1 1/4 hours.
Funeral Potatoes/Yummy Potatoes (Damon Robertson)
Recipe:
8 Potatoes (may vary if potatoes are large or small)
1/4 cup Butter
1 can Cream of chicken soup
1 pint Sour cream
3-4 Chopped Green Onions (I typically use 2 or 3 full bundles)
Salt & Pepper to taste
1 1/2 cups Shredded Cheddar (I use Tillamock)
Directions:
Boil potatoes whole for 15-20 mins until you can poke a fork in just barely (not soft). Let them cool before peeling and grating them. Put into a 9x13 inch pan sprayed down with Pam. In a saucepan melt the butter. Add All remaining ingredients, except for the cheese, and heat up on low to medium heat until warm enough to melt the cheese. Stir to avoid scorching the sauce. Pour sauce over the potatoes and fork it through until all potatoes are coated well. Cover casserole with an additional 1/2 cup of grated cheese before putting it in the oven for 45 mins at 350*. Serve hot.

Recipe:
1/2 cup unsalted butter, melted
1 cup Graham Cracker Crumbs
1 cup Semi-sweet chocolate chips
1 cup butterscotch chips
1 cup pecans, coarsely chopped
1 cup Shredded coconut
1 can (12 oz.) Sweetened Condensed Milk
Directions:
Preheat oven to 350* Farenheit. Melt butter; pour into the bottom of a 9x12 inch baking pan. Pour graham cracker crumbs over butter; pat down. Add the chocolate chips, butterscotch chips, pecans, and coconut in the order listed; sprinkling in even layers. Pour the can of sweetened condensed milk over the top. Bake for 25-30 minutes until top is nice and golden. Cool completely. Cut into bars.

ANNOUNCEMENT: December Christmas Party
Our December dinner will be a bring what makes it a holiday dinner for you. Share your favorite dish with other mid-singles in the area. This delicious event will be held 7pm December 5th 2016 @ the Woodbury's home. Please come share in good food and good company.
