ANNOUNCEMENT: August is Singapore Cuisine

Alright everyone, the August potluck is coming up fast now. This month we will have a special guest from the Anderson Mill ward. The cuisine is one that he enjoys so be prepared to impress. Lol.

As usual here's what you need to know

Theme: Singapore Cuisine
Where: Woodbury's Home
When: 7pm, August 7th

Hope to see everyone there. As usual if you wanna share your recipes submit them here or hand them to me at the dinner and i will make sure it gets shared on the blog. Also, as a courtesy to our hosts the Woodbury's, please let them know if you are planning to attend especially if it's your first time coming. This is so we can make sure to plan for you and have somewhere for you to sit, eat, and socialize :) See y'all then!

JULY: Happy 4th!

Thanks to everyone that was able to attend the dinner this month. We were all blown away with all the great food and nice company. I know i had fun and got to meet a lot of new people in the area. Hopefully I can locate the pictures from this dinner to post them when I can. Also if you would like to share your recipes please submit them and i will make sure they get added to this post for others to enjoy. Also, in the future if you take pictures at our dinners that you would like to share just send them my way and i will take care of those as well.

ANNOUNCEMENT: July BBQ 4th of July DInner!!! Yummy

OK everyone, it's that time of year again! Our annual 4th of July BBQ potluck. Here's what we know at this point in time. We are being asked to provide sides that we want to go alongside the BBQ (probably hamburgers/hotdogs). I cannot wait for this one as it's one of my favorite dinners of the year for our little group.

Date: July 3rd (the 1st monday of July)
When? @7pm
Where? The Woodbury's Home

This should be a little more relaxing than our usual dinners too so come and be prepared for good company, good food, and a little bit of needed summer downtime :)

ANNOUCNEMENT: June potluck dinner theme?

Well it is a bit early to be thinking about the next dinner for June. However, i want to make sure everyone is aware of the upcoming potluck theme. Korean will be our theme. This will give everyone time to think about what they are gonna bring :)

As per usual dinner will be on the 1st Monday of June @ 7pm at the Woodbury's home.

If you would like to share your recipes you can submit them directly from this blog on the right side of this page OR send them to me in any other fashion that you see fit to use. If not that's fine too :) Can't wait to see what everyone comes up with. These dinners are always amazing and if you haven't been to one of these in the past we would be glad to have you join us.

As a favor to the Woodbury's I have been asked to make sure if you are coming for the first time It would be much appreciated if you contact them before the dinner so they can make sure to have enuff dinner places set out for everyone. Thanks.

Announcement: May Potluck Theme?

When: Monday, May 1st @ 7pm
Where: Woodbury's Home

The May potluck theme is gonna be a bit unusual - "island cuisine". This will be limited in part to islands off the U.S. mainland. These could include places like Cuba, the Bahamas, Manhattan, Hilton Head, the Florida Keys, Hawaii, etc.

In other words ANYTHING GOES!

Hopefully this spurs everyone into thinking about what they might want to bring to the potluck. As usual we would love to have your recipes to share with each other for whatever you decide to bring. You can give them to me in person at the dinner, by email, or even submit them directly from this Blog.

Can not wait to see everyone again. See you soon!

ANNOUNCEMENT: April Dinner Theme, Springtime!

Think spring for the April potluck dinner.

Bring a dish that brings that wonderful feeling of springtime to the table. This might be one of our most challenging dinner themes so it will be interesting to see what people bring to this one. Hope to see everyone there.

Announcement: Saint Patricks Day is a comming!

Dinner is @ 7pm, March 6th @ the Woodbury's home like usual. If you plan on coming it helps if you let them know you plan on attending so we have enough dinner places set out for everyone.

Febuary: Italian "Pasta" Dinner

 Creme filled pastries?
 Blueberry something???
 Olive Garden Breadsticks
 Lemon Shrimp w/Zu-dles
 Pasta Salad
Stuffed Shell Pasta w/Parmesan cheese
 Home baked bread (sorry i forgot the name)
 Fresh Salad (was very colorful and tasty)
 Spaghetti Squash w/butter,salt&pepper
Use a fork to perforate all the way around the squash (longways). Place in microwave for 5 minutes. Remove using hot pads, and carefully use a large knife to cut along your perforations until you have 2 halves of the squash. Use a microwave safe glass dish with 1/2 an inch of water in the bottom and place both halves of the squash face down inside of the dish. Cover with Plastic wrap, but make sure it has a couple small holes poked into it to release some of the steam. Return to the microwave for another 20 minutes. Use a fork to scrape out the squash flesh from the skin. Serve immediately for best results. You can eat plain, with butter, salt&pepper, pesto, marinara sauce, etc. Enjoy!
 Anti Pasta
 Savory Cheesecake (not a desert)
 Ingredients:
4 oz. shredded-wheat-style crackers (Triscuits)
2/3 c. chopped tart dried cherries
1/3 c. pecans
2 tbsp brown sugar
2 tsp chopped fresh thyme leaves
2 tsp. paprika
1/4 tsp. cayenne pepper
3 tbsp. unsalted butter
8 oz. cream cheese
5 oz. parmigiano-reggiano cheese
1/3 c. ricotta cheese
1/3 c. sour cream
2 tsp. dijon mustard
1/2 tsp. salt
2 large eggs

Directions:
Crust: Preheat oven to 350*. Line the bottom of a 7-inch springform pan with parchment paper. Lightly butter the paper and set aside. Place crackers, dried cherries, pecans, brown sugar, thyme, paprika, and 1/8 tsp of cayenne in a large mixing bowl and toss to combine. Stir in the melted butter and press the mixture into the bottom of the lined pan. Blind bake he crust until set -- about 15 minutes. Cool on a wire rack and set aside.
Batter: Place the cheeses, sour cream, mustard salt, and remaining cayenne in a large bowl and mix with an electric mixer set on low speed until well combined. Add the eggs, one at a time, beating well after each addition, until mixture is smooth. Pour the batter into the pre-baked crust and bake until golden brown -- 40 to 50 min. Cool in the pan on a wire rack to room temperature. Remove from pan and serve at room temperature. Cake may be stored, tightly wrapped in plastic and refrigerated, for up to 3 days.

ANNOUNCEMENT: Febuary Italian Dinner

Looks like pasta is on the horizon! Come join us on the first Monday of February for our potluck dinner. Bring a dish to share, and yourself to enjoy the company. Great food! Interesting people! We cannot wait to see you there.

As per my usual request please bring copy of your recipe to the dinner to share OR send a digital copy with me so I can make sure to post it on our next post.
